Alfredo Sauce – Recipe

This is one of my most asked about recipes and since the whole implosion of my blog and the loss of ALL my recipes (..yes I still tear up a bit when I think about it!) this is one that hasn’t made it back to the new site.

Until now! My best friend text me this morning asking about it and I promised to get it up for her today! 🙂

Now when I make this, the first thing I ask myself is “How many calories do I want to consume with this meal?” well..that’s not 100% true. I actually ask myself “how many points do I have left today?” you know, because I do Weight Watchers? Yeah..so anyhoo!

I created TWO versions of this recipe because there were days where I absolutely did NOT have the points to eat this recipe as I had originally created it. But there are times when I’ve been working my butt off at the gym and I DESERVE every single cheesy point.

So below you’ll find BOTH versions of this recipe. My mom has had both and she said that she actually likes the lighter version better. The original is DEFINITELY in the category of comfort food. Heavy. Comfort. Food.

Original Alfredo Sauce

This is the original alfredo sauce recipe complete with all the full fat and cheesy goodness!

Ingredients

  • 8 tbsp butter
  • 8 oz cream cheese cubed
  • 2 tsp garlic powder or 2 tbsp of finely, minced garlic
  • 2 cups milk whole preferred, but 2% works just fine
  • 6 oz parmesan cheese grated*
  • 1/8 tsp black pepper
  • 1/8 tsp ground nutmeg

Instructions

  1. Melt butter in a medium, non-stick saucepan over medium heat. If you choose to use the minced garlic in place of the garlic powder, saute the garlic until fragrant (about 1 minute).

  2. If not using the minced garlic, now add the garlic powder and the cubed cream cheese, whisk until completely smooth.

  3. Whisk in the parmesan cheese, black pepper and ground nutmeg until smooth. It will be very thick at this point.

  4. Add the milk slowly, a little at a time and whisking til smooth between additions. 

  5. Whisk, whisk, whisk. When the sauce is completely smooth, thick and creamy, you’ll know it’s ready!

  6. Serve with hot pasta alone or along with sliced grilled chicken or sauteed shrimp.

Recipe Notes

If you have leftovers, simply add to a small saucepan and slowly warm up and then whisk milk in a little at a time to bring it back to the right consistency.

And for those looking for the lighter version – here you go! 😉 Also if you’re a fellow WW member and are curious how many points this is per serving..I got’cha covered! 😉 Now it’s been a while since I’ve made this and I can’t 100% remember how many cups total this recipe makes, I feel like it’s about 2 cups and I consider a serving to be about 1/4 cup. So depending on how many cups it makes total, you’re either looking at 5 SmartPoints (if it makes 1 1/2 cups total) or 4 SmartPoints (if it makes 2 cups total) The next time I made this (which will be this week actually!) I will update this so you’ll know for sure 😉

Lighter Alfredo Sauce

This is the lighter version of the Original Alfredo Sauce. This version is perfect for those who are looking for the delicious flavor of the original but with less fat and calories.

  • 2 tsp garlic powder or 2 tbsp finely, minced garlic
  • 9 tbsp parmesan grated
  • 1/3 cup fat free half & half
  • 2 cups skim milk
  • 4 oz fat free cream cheese
  • 1 tsp chicken base stock
  • 1/8 tsp black pepper
  • 1/8 tsp ground nutmeg
  • 1/16 tsp oregano optional

Instructions

  1. Melt butter in a medium, non-stick saucepan over medium heat. If you choose to use the minced garlic in place of the garlic powder, saute the garlic until fragrant (about 1 minute).

  2. If not using the minced garlic, now add the garlic powder and the cubed cream cheese, whisk until completely smooth.

  3. Whisk in the parmesan cheese, black pepper and ground nutmeg (and oregano if using) until smooth. It will be very thick at this point!

  4. Add the half & half and milk together in a measuring cup and then pour slowly, a little at a time into your sauce pan, whisking til smooth between additions.

  5. Whisk, whisk, whisk. When the sauce is completely smooth, thick and creamy, you’ll know it’s ready!

  6. Serve with hot pasta alone or along with sliced grilled chicken or sauteed shrimp.
